  1. Cut the eggplant and zucchini into large pieces. Heat 2 tablespoons of sunflower oil in a frying pan and fry the vegetables over high heat. We put the fried vegetables in a separate bowl.
  2. Peel the potatoes and boil in salted water for 5 minutes after boiling. Drain the water.
  3. Finely chop the onion and garlic and fry in 2 tablespoons of sunflower oil. Cut the pepper into strips and add to the onion. Fry.
  4. Peel the mushrooms and cut them into large pieces. Add to the onion and pepper. Fry.
  5. Add 50 g of water, salt and pepper to taste. Bring to a boil, reduce the heat, cover and simmer for 5 minutes.
  6. Add the fried zucchini and eggplant. Stir gently and remove from heat.
  7. Grease the baking dish with sunflower oil. Lay out the potatoes. I have a small potato and I’m cutting it in half. If you have large potatoes, then cut them into slices.
  8. Place on top of the fried vegetables. Do not mix. Sprinkle with cumin.
  9. Cut the tomatoes into large pieces and put them on the vegetables all over the surface. Sprinkle grated cheese on top. Bake in a preheated 180 degree oven for 25 minutes.
