The salad is interesting with a combination of sweet carrots and beets with garlic, peanuts and cheese. Cooked chicken with spices turns out to be satisfying and can easily replace a full-fledged dish for dinner.

  1. In a blender, grate the carrots on a fine grater, I put the beets and garlic in a bowl. You can use a grater with medium holes. It will be more beautiful, but not as juicy as in shallow water.
  2. I dried the peanuts and fried them in the microwave. It is easy to separate the husks from the nuts and not too finely chop them in a meat grinder. Pour the nuts into a bowl, add salt and pepper and pour oil.
  3. Mix the contents of the bowl well, and the salad I put it on one side on serving plates. Cut the chicken fillet into small cubes and put it in bowls on the other side. Squeeze lemon juice on top of the lettuce leaves.
  4. I shredded the cheese and sprinkled it on the salad. Decorate with parsley leaves. The salad turned out to be sweet, juicy, with a slight lemon sourness. If carrots and beets are not very sweet, you can add sugar to the salad to taste.
