  1. Peel the carrots and grate them on a fine grater.
  2. Walnuts are fried and not very finely chopped. Remove the zest from the orange.
  3. Wash raisins and pour boiling water for 15 minutes. Then dry it.
  4. Mix all the dry ingredients: flour, baking soda, baking powder and cinnamon.
  5. Beat eggs with sugar until white, fluffy mass. Add vegetable oil, carrots and orange zest. Mix well. Then we introduce the dry ingredients in parts and knead the dough is not thick. Add nuts and raisins. Let the dough stand for 15 minutes.
  6. Preheat the oven to 180 degrees. In silicone muffin molds, lay out the dough into 3/4 of the form. Bake for 15-20 minutes until the skewer is dry.
  7. Prepare the icing. I took the frosting with a taste of vanilla. Prepare the glaze as indicated on the package. But to create a new year’s mood, I added a drop of food coloring and made the glaze green.
  8. On the cooled muffins to apply the icing and decorate with candy sprinkles in the form of balls. These are the “Christmas trees” we get.
