What do you think when you look at a pumpkin? I, for example, when I see it on sale I think "well, that's autumn... how fast!")))... And how many can be cooked from it beautiful bright delicious dishes... And of course pumpkin pastries... This is something special!! Today I suggest you bake a very tasty, fragrant, soft pumpkin cookies with a crisp cinnamon crust...
250g pumpkin cooked in any convenient way (I cooked in a steamer for 15 minutes). Ready pumpkin mash with a fork until puree.
In a bowl, mix pumpkin puree, 100g sugar, 100ml vegetable oil.
In the resulting mass, add walnuts (pre-chopped them) and washed raisins. Stir.
To our mass add baking powder and, gradually adding flour, knead a soft elastic dough (flour is not necessary to score, let the dough stick to your hands a little better, the main thing is that it keeps its shape).
3 tbsp brown sugar mixed with cinnamon.
From the resulting dough to form balls in diameter 5cm (slightly larger than a walnut), roll well in a mixture of sugar and cinnamon and put on a baking sheet, covered with parchment for baking, at a small distance from each other.
Cookies bake in a preheated 180 degree oven until tender 25-30 minutes.
Cookies are bright, fragrant and very tasty!!! With a mug of tea or a glass of milk...
