I suggest you treat yourself to a piquant, bright, moderately sweet, fragrant biscotti with carrots and nuts! They will be a nice addition to a cup of coffee or tea!

  1. Grind the oat flakes with a blender.
  2. Mix flour, crushed oat flakes, a pinch of salt, baking powder and spices – cinnamon and ginger – in a bowl. Mix it.
  3. Peel the carrots, cut them into slices and mash them with a blender.
  4. In a separate bowl, whisk the eggs with sugar into a light, fluffy mass.
  5. Add the pre-melted and cooled butter and carrot puree.
  6. Mix thoroughly.
  7. Mix the flour mixture with the carrots.
  8. Add walnuts (after slightly crushing them with a knife).
  9. Knead a smooth, soft, non-sticky dough.
  10. Divide it into two parts and form small loaves. Place them on a baking sheet lined with baking paper. We send it to bake in a preheated 180 degree oven for 25 minutes.
  11. After 25 minutes, remove the baking sheet from the oven.
  12. Carefully, slightly diagonally cut the loaves with a knife into pieces 1-1. 5 cm thick. Put the biscotti on a baking sheet and put it back in the oven for 10-15 minutes.
  13. Remove the finished cookies from the oven and let them cool completely. Store completely cooled biscotti in a closed jar.
  14. Have a nice tea party!
