Peel the pumpkin and onion and cut them into large pieces.
Chop the pumpkin, onion, garlic and parsley using a blender or meat grinder.
Mix with the minced chicken.
Add semolina, eggs, salt and pepper and mix well.
In a very hot pan, pour the oil and spoon the minced meat. Fry the cutlets on both sides.
Put the cutlets in a thick-bottomed pot. When all the cutlets are ready, cover the pan with a lid and put on a very slow fire (I have an induction I put on 3), simmer for 12-15 minutes.
