  1. Mix the jam and lemon juice.
  2. Using a mixer, whisk sour cream, cream, sugar, vanilla, cardamom and ginger. Whisk until peaks form.
  3. Put 1 tablespoon of cream in the glasses.
  4. Then 1 tablespoon of crushed ginger cookies.
  5. And put 1 tablespoon of jam on top.
  6. And repeat all 3 layers again. Put a layer of cream on top. I bought ginger cookies. But you can do it yourself. Here is the recipe: beat 3/4 cup of margarine with eggs and 1 cup of sugar. Add 1 egg and 1/4 cup molasses (can be replaced with honey or maple syrup) and mix well. Add 2 cups flour, 1 tbsp ginger, 1 tsp cinnamon, 2 tsp baking soda and 1/2 tsp salt and mix well. The dough turns out. Divide the dough into small equal parts and roll the balls. Cover the baking sheet with baking paper and put the balls on top, giving them the shape of cakes. Bake for 8-10 minutes in a preheated 175c (350F) oven.
  7. Refrigerate to cool for 1 hour. Before serving, garnish with raspberries on top. Enjoy your meal!!!
