Here are all the ingredients we need for our cold dessert.
Preparing the berries.
Wash the berries. With apricot peel and finely cut.
Separate the yolks from the whites and pour into a metal bowl. Add sugar, vanilla sugar and orange juice. Beat in a hot water bath (whisk for about 5 minutes).
Remove our dishes with liquid ingredients from the bath and immediately lowered into a container with cold water.
Continue whipping until the mixture cools.
Whisk cream and mix with our yolks. Add berries, orange jam and chocolate chips (grate our chocolate).
Put the mass in a silicone mold (I used different molds). If you do not use silicone molds, they must be lined with cling film.
Put in the freezer overnight.
For 10 minutes before serving to get out of the cold and drop the form into hot water, turn upside down.
With silicone forms easier them to lower the water is not necessary.
Here is a delicious and beautiful dessert turned out.
