These cookies are baked in Poland on holidays, including Easter. There are many recipes with additives of various nuts and dried fruits. Suggest an option with almonds and raisins. The recipe does not contain oil. The cookies turn out soft, like a dry cake.
Dry the almonds in a frying pan and grind them into coarse crumbs with a rolling pin or a blender. Cut the raisins into 2-4 pieces and pour boiling water over them.
Beat the eggs with sugar and salt.
Add flour and baking powder, I have vanilla flavor. Mix it.
Add the soaked raisins and chopped almonds to the dough.
We take a form, I have 20 by 20 cm, you can take a larger form if you want a thinner cookie. If necessary, lubricate the mold with oil, lay out an even layer of dough. Put in the oven, preheated to 180 degrees, bake for 20 minutes until ready.
Cut the finished hot cookies into lozenges with a sharp knife.
