No, no, they don’t serve soups at weddings in Italy, don’t be surprised. Among the abundance of delicious snacks and several types of delicious pasta on the tables, it is unlikely that anyone will want soup… Oh, I won’t be at a wedding in Italy, but I can cook the soup… I recommend it to you too.

  1. Prepare the minced meat in advance. To do this, chop the beef with green onions and parsley in a meat grinder, mix and chop it off.
  2. Here is such a set of products we will need to prepare soup. I advise you to grow rosemary and thyme yourself, as I do, in ordinary pots, on the windowsill.
  3. Add grated parmesan, egg yolk, semolina and salt to the minced meat, mix until smooth.
  4. Form minced meatballs, the size of a walnut. Put it in the refrigerator for now.
  5. In 3 liters put a saucepan with water on the fire. In a frying pan in 2 tablespoons of olive oil, fry the onion feathers and pieces of Bulgarian pepper, 3-4 minutes, medium heat.
  6. Add the potato cubes and olives, fry for 5 minutes, stirring.
  7. Transfer the fried vegetables to a saucepan with boiling water, cook for 5 minutes. Then add the meatballs, let them boil. Cook for 5 minutes.
  8. Peel the tomato from the skin, cut into cubes.
  9. Fry the tomato in 1 tbsp. olive oil with sugar, 5-7 minutes, the heat is below average. Add the thyme and rosemary, remove from the heat after a minute.
  10. Add the vermicelli to the pan, cook for 3 minutes, tomato roast, dried basil. Add salt to taste, cook for 5 minutes.
  11. Add the chopped parsley, let it boil and remove from the heat. Close the lid and let it brew for 10 minutes.
  12. Serve hot.
  13. If desired, sprinkle with grated parmesan.
  14. The so-called Italian wedding soup, “Italian wedding soup” has nothing to do with the wedding. If you ask native Italians what kind of special soup they serve at weddings, then the interlocutors will most likely not understand you and will be surprised: they do not have any “wedding soup” and have never had it. The name appeared in America, banal – because of an error in translation. When two things fit well together, the Italians say: si sposono bene, – they are “happily married”, “happily married”, and in the southern dialect — that they are maritati (with the same meaning). The Italian woman tried to explain that the products should be selected so that they “marry” well in the soup, forming a delicious dish. This is how this soup appeared – vegetables, vermicelli and meat in the broth get along perfectly and deserve the epithet maritati, wedding soup.
