If the jam pieces of fruit or bone, then wipe through a fine sieve. I have a purchased orange jam.
Combine protein and jam in one bowl. Protein should be well separated and dishes should be clean and dry. In a saucepan with a thick bottom combine agar, water and sugar.
At the same time, heat the syrup and whisk the proteins with jam.
Bring the syrup to 110 degrees. White egg with jam should by this time increase in volume and lighten.
A thin stream pour the syrup into the egg with jam. Beat at maximum speed.
The marshmallow mass should keep its shape well. If necessary, add a drop of food coloring.
Shift in a pastry bag with a nozzle. I have 1 m. Deposited on parchment. Allow to stand for 5-6 hours at room temperature.
Roll in powdered sugar/dextrose (grape sugar).
