Muffins “Crumpled January” Recipe
This name is a bit of a joke, I have such cupcakes. Everyone is familiar with the situation when on the 3rd-5th day of the New year’s eve there is a bottle of champagne that no one wants to drink. The remains of peeled tangerines, which the children did not finish, are scattered around the apartment. That’s when you can cook these delicious, tender, fragrant cupcakes.

  1. Tangerine is thoroughly washed and cleaned. If you don’t mind the tangerine peel, then leave some of the peel. Grind into a puree using a food processor.
  2. I used a food processor.
  3. Rub the puree through a sieve to use the juice in the future, you should get about 70 ml.
  4. Put eggs and sugar in the bowl of the combine. Whisk with a whisk. I used a food processor.
  5. Add the tangerine juice, champagne, vegetable oil and whisk for another minute.
  6. Pour the flour and baking powder into the bowl of the combine and mix several times. You may need more flour, the dough will turn out thick, like pancakes.
  7. Put the dough on 2/3 in the muffin molds. I got 12 pcs. Place in a preheated 190 degree oven and bake for 25 minutes until dry.
  8. Ready-made cupcakes can be sprinkled with powder or decorated with icing. In my opinion, they look quite appetizing. All the best in the New Year!
