Mushroom hodgepodge is a delicious and rich soup, the recipe for which is simple. And it is the recipe for mushroom pickle that I want to share with you today.
Cut potatoes, carrots, cucumbers and onions. Pour boiling water over the dried mushrooms, wait until they are soaked, and cut them too.
Fry the onions.
Add the mushrooms (after defrosting them). Fry. Add soy sauce and let it simmer for 5 minutes.
Add the carrots and tomato paste, mix everything together and simmer for another 5-7 minutes.
We cook potatoes in a saucepan, add our roasting, mushrooms (dried), cucumbers, olives, a little brine, lemon juice, tomato paste, squeezed garlic. Bring to a boil, turn off the heat, add dill and parsley and leave to infuse.
