  1. Beat the eggs, sugar and salt with a mixer until a fluffy foam forms.
  2. Without ceasing to beat, pour in boiling water, milk and butter. Stop the mixer. Add flour sifted with baking soda.
  3. And once again beat everything with a mixer. The dough is obtained without lumps and liquid. We don’t add flour anymore.
  4. Bake in a well-heated frying pan, greasing it with oil only at the beginning of baking.
  5. Here they turn out to be thin, perforated, very soft, not rubbery and very elastic. Amazing!
  6. I served pancakes with caviar. Put a thin layer of cream cheese on the pancake.
  7. Fold in half, then fold in half again with the round side inside.
  8. Roll it into a roll.
  9. String the pancake rolls on a skewer so that they do not rotate, and put the caviar on top.
  10. Pancakes with kurd. I have raspberry-strawberry. To serve with a Kurd, pancakes can be wrapped with “cigars” by folding them like this.
  11. And then screw it tight.
  12. And you can also fold up to 4 times and get a triangle. Serve with curd, mint and berries.
