  1. We started selling flattened pork wrapped in a roll, which is very convenient for such a roll, but it may not be very smooth, like mine. You can take a piece of ordinary pork and cut it in the middle, and then cut it from the middle to the sides – open the book to make a layer too. The pork layer should be beaten off, but not to fanaticism.
  2. Spices can be added to your liking, the choice is not limited. And in general, it is better to prepare everything in advance. I have mushrooms-honey mushrooms, you can use any fresh or frozen mushrooms.
  3. The pork layer is salted and peppered on the one hand, and on the other – also peppered and salted, and generously lubricated with mustard. Leave to marinate on the table.
  4. Cut the mushrooms into slices.
  5. Fry them in oil until golden brown and completely remove the liquid from them. Cool it down a little.
  6. Grind in a blender until half of the mushrooms turn into porridge, and the second into small pieces, or completely until a homogeneous mass is obtained.
  7. Cut olives into rings, dried tomatoes into small pieces. Wash and dry the spinach. By the way, in the absence of dried tomatoes, you can take a small amount of cranberries and cranberry puree.
  8. Place the fried mushrooms evenly on the pork layer.
  9. Sprinkle dried tomatoes, olive rings and torn spinach leaves on top of the mushrooms.
  10. Wrap the pork in a roll. Sprinkle the remaining oil from the dried tomatoes on top.
  11. And wrap tightly with several layers of foil.
  12. Put the finished roll on a baking sheet and send it to a preheated 140 degree oven for about an hour. If you use a thermometer with a probe, then bring the pork inside to a temperature of about 60 degrees. By the way, pork is completely ready at a temperature inside 73 degrees. Now we have not brought it to readiness a little.
  13. Take out the roll, cut the foil in the middle and unfold the roll from above. Return the roll to the oven and, raising the temperature to 200 degrees, brown it on top.
  14. Take out the finished roll, cover it with foil and leave for 10-15 minutes. This is if you plan to serve it hot. If you plan to serve it cold, just cool it and put it in the refrigerator.
  15. We served it hot, so the roll opened up a little when it was sliced, but it didn’t affect the taste in any way. The cold roll is easily cut into thin pieces and does not open.
  16. Agree that the labor costs are minimal, and the dish turns out to be festive and very spectacular. In addition, it is very, very tasty and fragrant. A piece of roll looks so chic that it practically does not require jewelry.
  17. You can serve it with a vegetable side dish or salads of fresh vegetables.
