  1. Dip the spinach into boiling water, cook for 1 minute, then flip it into a colander. Peel the onion and cut into half rings, spinach, when excess moisture drains from it, chop coarsely.
  2. Peel the pepper from the seeds, cut into cubes. Also chop the boiled potatoes and chicken.
  3. Heat the vegetable oil in a frying pan, fry the potato slices until browned, mix them with soy sauce and black pepper, put the potatoes out of the pan.
  4. Add, if necessary, a little vegetable oil to the same pan, fry the onion, then add the bell pepper and chicken pieces, fry a little more.
  5. Combine with potatoes and spinach, mix.
  6. Carefully break 3 eggs on top, without breaking the integrity of the yolks, season with pepper, cover the pan with a lid and fry on low heat for a few minutes until the eggs are fully cooked. Garnish with fresh herbs if desired and serve immediately.
