Roll “Zucchini with Curd Cheese” Recipe
I prepared a roll that can be used as a snack, as an appetizer on the festive table, as a hearty dinner or instead of a sandwich for Breakfast. Roll with zucchini / zucchini is like pancakes-the product is one, and everyone has their own recipes. I suggest you try my version.

  1. We will prepare the necessary products. Wash the zucchini, clean the stalk, if there is damage on the surface – remove, do not remove the skin. Prepare all the spices, curd cheese should be at room temperature, sift the flour.
  2. Dry zucchini with a towel and cut into thin rings – 1-2 mm.
  3. Beat eggs in a convenient way, foaming well,
  4. pour in the kefir, add spices and baking powder.,
  5. add the flour, mix gently until the lumps disappear, then add the vegetable oil and mix lightly. Cover the baking sheet with parchment, grease with vegetable oil, and spread the zucchini rings over the entire surface in one layer. Pour the prepared dough on top.
  6. Place the pan in a preheated 180*C oven for 15 minutes. The size of my baking tray is 38 x 34 cm, and the dough is poured in a thin layer, baked quickly. If you take a smaller baking tray, bake until lightly browned and check the dough for readiness with a wooden skewer, it should remain dry after puncturing the dough.
  7. Remove the baking sheet from the oven and roll the cake, without removing it from the parchment, into a roll, cover with a towel.
  8. When the roll is slightly warm, unwrap it and carefully separate it from the paper, but leave it zucchini down. Mix the curd cheese, if desired, you can add grated garlic, and grease the entire surface with a thin layer of cheese. Put the rest of the cheese “roller”along the wide edge.
  9. Using paper, make the first turn of the cake around the cheese, seal it and wrap it.
  10. tightly into the roll, trying to make it as tight as possible. The edges of the paper are tightly wrapped as “candy”. If it is not tight enough, the roll will not hold its shape well when slicing. Safely wrapped roll in a food bag and put in the refrigerator for 3-4 hours or overnight.
  11. The dough will be soaked with cheese and garlic, will soften. Now you can unwrap the parchment and cut the roll into portions. If you serve hot coffee or tea with it , you will have a great hearty Breakfast or dinner. The dough tastes like a pancake soaked in sour cream. You can serve sour cream or hot sauce with the roll, both options are delicious! Enjoy your meal!
