  1. Everything is very simple and fast. The flour is sifted. Kefir is 2.5% fat at room temperature. Cottage cheese of 5% fat content. Sugar to taste.
  2. For the dough, mix the sifted flour, a pinch of salt, yolk, kefir and soda. Knead a homogeneous, smooth, slightly sticky dough. You don’t have to worry about the “light” stickiness. When you roll out, the dough will still be sprinkled with flour. But if the dough is scored with flour, then the dumplings will turn out tough. The dough is ready. I put it aside, you can cover it with something so that it doesn’t start.
  3. Stuffing is even easier. Add yolk, sugar, vanilla sugar to the cottage cheese. If the cottage cheese spreads and does not keep its shape well, you can add 1 tablespoon without a slide of semolina. And leave to swell for 10 minutes. The filling is ready.
  4. I will cook dumplings in a frying pan on a steam bath. Pour 1/4 full of water and put it on a large fire. It is important that the water boils! Dumplings after modeling will be prepared immediately. To be honest, I’ve never frozen them, so I won’t say how they will behave after freezing.
  5. Sift the work surface and the dough well with flour. Roll out the sausage and divide into 12 equal parts.
