  1. Wash the potatoes thoroughly. Cook over low heat with a small boil until almost ready.
  2. While the potatoes are cooking, prepare the ingredients for the filling. Finely chop the onion.
  3. Garlic is also finely chopped.
  4. Carrots need to be grated on a coarse grater.
  5. In a frying pan, heat the vegetable oil. Fry the onion and garlic for a couple of minutes.
  6. Add the grated carrots. Fry for another 2 minutes.
  7. Pour out the red beans. You can use boiled or canned food.
  8. Add tomato paste, a little water.
  9. Mix everything and simmer under a closed lid for 10 minutes.
  10. After the potatoes are cooked, let them cool down a little. The cooled potatoes are cut into halves. Select a part of the pulp.
  11. In the filling, add a little butter, ΒΌ teaspoon of sugar, thyme, ground black pepper.
  12. Mix everything together. Add the potato pulp. Mix it up.
  13. Fill the potato halves with the filling. We spread it with a slide.
  14. The baking dish is greased with oil. Transfer the stuffed potatoes. Sprinkle with grated cheese on top. I have Gouda.
  15. We send it to the preheated oven to 180 degrees. Bake for 5-10 minutes under the grill of the oven.
  16. Such potatoes can be served as an independent dish or as a snack. A great addition will be a fresh vegetable salad. Bon Appetit!
