I’ve been sick of marshmallows for a long time. Recently, a friend asked me to make a cake, but without gluten and dairy products, the idea of a marshmallow cake immediately came to mind. Roll one tortilla in corn flour, then try to bake several.

  1. For the cake, mix all the ingredients, put them in a mold (I have 18 cm) and bake at 190C for 10 minutes.
  2. Remove and let cool.
  3. To prepare marshmallow mass, either a kitchen machine or a mixer should be at hand. The blender, unfortunately, does not cope with marshmallows. For a HAND mixer, take half a serving. So, puree: it is better to take fruits and vegetables with a high content of pectin: apple, black currant, cranberry, apricot, plum. It should be thick. Add 180 g of sugar, heat until the sugar is completely dissolved.
  4. Combine the agar with water and heat, stirring constantly, add the remaining sugar.
  5. Preheat the syrup to 110 °C, STIRRING CONSTANTLY.
  6. When the syrup temperature reaches 100 ° C, start whipping the protein with mashed potatoes at maximum speed until thick.
  7. Pour in the syrup in a thin stream. After all the syrup is poured out, whisk for another 30-40 seconds.
  8. If desired, you can add more nuts (dried fruits, chocolate). I had apricot marshmallows, so I added 50 grams of almonds. Stir quickly.
  9. Put the cake into the mold (ring). Put the edges with an acetate film or a file. A little oil on the inside.
  10. Put the marshmallow mass in a cake pan. Let cool at room temperature for 15-20 hours. Remove the acetate film. Enjoy your tea.
