Azu from Turkey Recipe
Aza is usually made from beef or lamb. And we like a more tender version of this dish – using turkey. This is one of the most famous and widespread Tatar dishes.

Instructions
Wash the turkey fillet, dry it and cut into pieces.
Melt the butter in a hot frying pan and fry them over high heat until golden brown. Then leave it separately.
Fry the finely chopped onion in the same pan, sprinkle it with sugar.
Add the carrots, grated on a coarse grater. Fry together for a couple of minutes. Add flour and mix.
Add tomato paste. Warm.
Pour in hot water, bring to a boil and put the fried meat. Add spices. Cover and leave to simmer for 15-20 minutes.
Grate cucumbers on a coarse grater.
Fry the potatoes separately in a hot frying pan until golden brown.
Add the grated cucumbers.
Add the fried potatoes. Add salt to taste. Boil.
Add chopped garlic and herbs. Stir, cover and turn off. Let it brew a little. Sprinkle with herbs before serving.
