Azu with Garlic Arrows Recipe
Azu is a Tatar dish, and there are many varieties of it in the world. As they say – every housewife has her own secret. I offer mine. It is less greasy due to the fact that not all the ingredients will be fried separately, as in the traditional recipe, but it is sharper thanks to the pickled garlic arrows.

  1. Heat the oil in a frying pan, throw the chopped meat into it and fry over the highest heat so that each piece is covered with a crust.
  2. Now pour in about 1 cup of water, add soy sauce, cover and simmer for about 30 minutes – during this time the water should boil. If the water does not boil, open the lid, turn on the maximum heat and evaporate the water.
  3. Throw the onion to the meat and fry it well.
  4. Now add the chopped pickles and fry them too.
  5. Add the sliced tomatoes without skin and tomato paste, mix.
  6. Add the chopped potatoes and water. The amount of water depends on whether you want the dish to be thicker or more gravy. It took me about 2 glasses. Try it with salt – dose it if necessary. And one more thing – I always put sugar in dishes with tomatoes to balance the taste – so that it is not very sour. You decide whether to add sugar or not Cover and simmer over low heat until the potatoes are cooked.
