Peel the liver from the films, dry with a paper towel and fry in olive oil for 3-4 minutes on each side. At the end of frying, season with salt and pepper, add thyme leaves and crushed garlic.
Put the finished liver in a baking dish. Place the chopped tomatoes on top.
Grate the cheese on a coarse grater.
Sprinkle the liver with grated cheese. Bake in the oven at 180 degrees until the cheese is browned. (10-15 minutes)
