Lean Cake “Mojito” Recipe

  1. Put clean, dry mint leaves in a blender (you can use 2-3 tablespoons of dried mint) and sugar. Grind.
  2. Put the mint sugar in a bowl, add vegetable oil, zest of one lime, juice of half a lime and sparkling water. Mix it.
  3. Sift the flour with baking powder.
  4. Mix the mint mixture with flour, mix well.
  5. Add the nuts and mix again.
  6. Transfer the dough into a baking dish (I have silicone, so that nothing gets smeared) or into muffin molds, small cupcakes, it is better not to use high molds. Bake in the oven, preheated to 180 degrees, for 40-50 minutes, until the pancakes are dry. Let cool in the oven.
  7. For the glaze, sift powdered sugar with natural mint and squeeze out parts (so that the glaze does not come out too liquid) juice from the remaining half of the lime. Rub thoroughly with a spoon as soon as the mixture becomes homogeneous, opaque and covered with a shiny white glaze. Pour it over the cooled cake.
  8. The pie turns out to be very fragrant, delicious, with a slightly moist texture.
