Lean Rice and Corn Pancakes with Filling Recipe

  1. We need to cook the rice in such proportions with water that we have a rice broth left. For the dough, we need to drain 200 ml of broth. For half a cup of rice with a capacity of 200 ml, I will take 600 ml of water. This rice is starchy, which is what I need. We put the rice to cook on the fire and cook the rice until ready, despite the fact that there is a lot of liquid in it. Do not digest the rice.
  2. For the filling, I’ll make pumpkin-apple jam. In a saucepan, pour sugar, add 1 tbsp of water and melt it. I will lay out the chopped pumpkin finely and also-the chopped apple. Cook for 15 minutes and squeeze the lemon juice directly into the saucepan.
  3. Mix, cook for another 5 minutes, sprinkle with cinnamon, put a star of star anise, mix again, cover with a lid and remove from the heat. Let the jam stand and cool. The rice was cooked by then and I used a sieve to salt the broth from it. The rice was left sticky in the pan. To put it in the filling, I’ll wash it.
  4. We make the dough for pancakes. In the broth, put sugar, baking powder, whisk together. Add corn flour, again whisk together. Pour sunflower oil, combine. The dough is ready and it has a consistency that should spread well in the pan, so that the pancakes are thin. We push it aside, let it stand a little before baking.
  5. While I collect the filling. Washed cooked rice is combined with jam. This filling can serve as an independent dish, very tasty porridge turned out. We leave a couple of tablespoons of jam for serving. The filling can be heated in the microwave for 1 minute at a power of 800, so that it is warm. You can put the rice in a saucepan with jam, after setting aside a little jam on a saucer, there is a filling and warm up. We bake pancakes. We heat the pan and despite the fact that the pan is non-stick and there is oil in the dough, we still grease it for each pancake. So the pancakes are better to turn over, because there are no eggs in them. Pour the dough D~ 18 cm. Corn pancakes are fragile and you don’t need to bake them big. Removing each pancake from the pan, immediately spread the filling on them and roll them into a roll. From this amount of dough, 6 pieces of pancakes turned out.
  6. The twisted pancakes are immediately spread on a plate for serving. 3 pancakes per serving. Put the remaining filling on the edge and pour over the jam that we left. Put as many pancakes per serving as you can eat!
