Lemon Cake with Blueberries Recipe
I remember the times when our mothers copied recipes from each other, shared them. Thus, many recipes have become not only classic, but also truly family. They have survived to the present day. What am I doing? This cupcake, I’m sure, if it had happened during the absence of the Internet, it would have been rewritten too.

  1. It is better to start cooking with streusel. While it cools down, you can prepare the dough for the cake. And that’s it! Cut the cold butter into cubes and mix with all the other ingredients. Rub it quickly with your hands.
  2. Assemble it into a ball and send it to the refrigerator for an hour. I put it in the freezer while I was making the dough.
  3. We prepare the dough for the cake. Mix the sifted flour with baking powder. Mix it.
  4. Whisk the softened butter with sugar.
  5. Continuing to beat, add one egg at a time.
  6. Mix cottage cheese (also known as cream cheese) with milk and mix well.
  7. Add to the butter mixture (in two steps), alternating flour and curd-milk mixture. And also the zest from three lemons. Mix everything well.
  8. Roll the blueberries in flour, add to the dough and mix.
  9. Put the dough in a mold (25x20x7). I used 3 disposable forms.
  10. Sprinkle streusel on top, grate it and bake at 180 degrees for about 45-60 minutes. After 40 minutes of baking, I covered the cupcakes with foil, because the streusel browned faster than the cupcake was baked. Be guided by the fact!
  11. I don’t even need to make an effort to convince you to try these delicious cupcakes (in my case there are as many as three!). The ruddy streusel, which gives splendor to the top of this dough, treacherously asked to leave it, eating it and constantly picking it out. I’m tired of driving my son away so that he doesn’t spoil this beauty ahead of time.
