I remember times when our mothers copied recipes from each other, shared them. So, many recipes have become not only classics, but also truly family-friendly. They have survived to the present day. What am I doing? This cupcake, I'm sure, if it appeared during the time without the Internet, it would also be rewritten.
It is better to start cooking with streusel. While it is cooling, you can prepare the dough for the cake.
And so! Cut the cold oil into cubes and mix with all the other ingredients. RUB quickly with your hands.
Collect in a ball and send it to the refrigerator for an hour. I put it in the freezer while I was making the dough.
Preparing the dough for the cake.
Combine the sifted flour with baking powder. Stir.
Beat the softened butter with the sugar.
Continuing to beat, add one egg at a time.
Mix cottage cheese (also known as cream cheese) with milk and mix well.
Add to the butter mixture (in two steps), alternating flour and curd-milk mixture. And also, the zest from three lemons. Mix everything well.
Roll the blueberries in flour, add to the dough and mix.
Put the dough in the form (25x20x7). I used 3 disposable forms.
Sprinkle the top with streusel, grate it on a grater and bake at 180 degrees for about 45-60 minutes. After 40 minutes of baking, I covered the cupcakes with foil, because the streusel was browned faster than the cupcake was baked. Be guided by the fact!
It doesn't even take an effort to convince you to try these delicious cupcakes (in my case, there are three!). The ruddy streusel, which gives fluff to the top of this pastry, treacherously asked to leave it by eating and constantly picking it out. I'm tired of driving my son away so that he doesn't spoil this beauty before the deadline.
On the slice, you can clearly see what a delicate and crumbly cupcake it is! Enjoy with tea and coffee)
