  1. Very finely chop the onion, I chopped it in a blender, and spread it on a preheated frying pan with olive oil.
  2. Defrost mussels and rinse thoroughly, this is very important, as they may contain pieces of shells. Put the mussels in a frying pan and add a little water.
  3. As soon as the water boils, add tomato paste, garlic and spices. I put salt, red pepper, a pinch of nutmeg, half a teaspoon of marjoram, a teaspoon of ground dried bell pepper.
  4. Dilute soy milk powder with 4 tablespoons of hot water. Pour the milk mixture into the mussels. Bring to a boil, cover and remove from heat.
  5. Prepare the spaghetti. When cooking, I add a teaspoon of olive oil. The spaghetti should turn out a little firm. Ready. Serve spaghetti with mussel sauce.
