  1. The main products. Looking ahead, I want to note that I took two small eggs and the souffle turned out to be a little loose. We suggest you take three medium-sized eggs! Minced meat should be finely chopped, so it will be easier to work with it. Divide the eggs into yolks and whites.
  2. Melt a spoonful of butter (from the total amount) and fry the minced meat over high heat. In the process of baking, break the minced meat into very small pieces, actively working with a spatula! At the end, add salt and pepper. Cool to a warm state. If you did not manage to finely chop the minced meat, then you can scroll it through a meat grinder with a large (!) grate. It will take a little more time, but the end result will please with a more uniform texture!
  3. In the same pan where the minced meat was fried, melt the remaining butter and add flour.
  4. Fry the flour until golden brown and light nutty flavor. Cool to room temperature and combine with the yolks.
  5. Add the remaining spices, semolina, butter and flour-egg mixture to the cooled minced meat and, working actively with a spoon, mix well.
  6. Whisk egg whites with a pinch of salt until stable peaks. With a spoon of whipped egg whites, safely mix into the meat mass.
  7. Then add one or two tablespoons of egg whites and mix again. But the rest of the proteins should be introduced gently and carefully!
  8. Grease the baking dish with butter and sprinkle with breadcrumbs.
  9. Lay out the meat mass, smooth it out. Bake in a hot oven at 180*-190* for the first 15 minutes.
  10. Then sprinkle with grated cheese and bake for another 10-15 minutes.
  11. The cheese should melt and brown. Allow the casserole to cool slightly in the mold, then cool completely on the grill.
  12. That’s it! The souffle casserole is ready! Cut into portions and serve to the table! With any sauces, side dishes and vegetables – very tasty! Enjoy your meal!
