Meat Rolls with Plums and Bacon Recipe
Delicious, juicy and fragrant pork spring rolls! Fresh plum will give sourness, and smoked bacon will give the same piquant taste! Serve in sour cream sauce with horseradish! It is good both by itself and with any side dish.

Ingredients
For rolls:
  • 700gram Porkneck, ham, I have carbonade
  • 5-8pieces baconsmoked, strips
  • 3pieces Plums
  • 1teaspoon Salt
  • 0,5glasses Waterperfect broth or beer
  • 1tablespoon Vegetable oilfor fry

  1. Wash the plums, remove the seeds and cut into large slices. Prepare the salt mixture: mix the salt and spices in a bowl. It’s more convenient to work this way, you won’t need to take spices out of cans every time.
  2. Cut the meat, as for chops, not in thick chunks. Beat well, sprinkle with a salty mixture of one or two pinches on each side of the piece.
  3. Place the halves of bacon strips on a piece of meat. Put the bacon on top, closer to the edge of 3-5 slices of plum. Bacon can be taken in strips, plums are also more or less. It all depends on the taste and size of the piece of meat.
  4. Feel free to roll the roll. Wind the threads. I have ordinary white sewing threads they will not have time to burn, it has been tested repeatedly! With their help, the rolls will keep their shape better. By and large, this step is optional, you can skip it.
  5. Do this with all the parts. I baked eight buns.
  6. Heat a spoonful of oil in a frying pan, put a sprig of rosemary and rolls.
  7. Fry the rolls on all sides until browned on a slightly higher than average heat. It will take 10-15 minutes. After that, remove the rosemary from the pan and throw it away. Remove the threads from the rolls.
  8. Next, return the rolls to the mold, pour water, add bay leaf. Simmer under the lid over medium heat for 15 minutes, turning the rolls over once.
  9. Prepare the sauce. After stewing in a frying pan, a concentrated “broth” should turn out. Transfer it to a bowl, let it cool slightly.
  10. Add sour cream, horseradish. Mix everything well and serve the sauce to the meat rolls.
