Parfait with Black Currant and White Chocolate Recipe
The dessert is simply amazing! The parfait is prepared in two ways: either frozen, then the dessert turns out like ice cream, or just very well chilled, and the dessert looks like a thick cream. A delicious combination of creamy sweetness and sourness of currants!!!

  1. Whisk the yolks with sugar.
  2. Preheat about half a serving of cream (do not bring to a boil).
  3. Introduce a thin trickle into the yolk mass. Everyone was beaten up. On low heat, boil the creamy yolk mixture for about 10 minutes, until it begins to thicken (with constant stirring). Let it cool down a little.
  4. Break the white chocolate and melt in a saucepan with barely boiling water.
  5. Add to the warm cream. Beat with a mixer or mix thoroughly. Cool the mass completely.
  6. Whisk the remaining cream with sour cream into a thick foam.
  7. Mix with the cooled egg-chocolate mixture. Mix gently.
  8. Sort the berries, wash and dry them (I had frozen ones, I defrosted them beforehand). Spread the finished cream over cream (glasses) mixed with berries. Put in the refrigerator for 3-4 hours, you can overnight. When serving, decorate as desired.
