In an electric coffee grinder, add the cooked chickpeas (still warm) together with the remains of water, peeled garlic, lemon juice, olive and sesame oil, grated coriander and grind until a homogeneous mass is formed. Add salt to taste.
If the mass turns out to be too thick and it will be bad to rub, add more olive oil or water – there should be no lumps left.
You can beat it in a blender. Transfer the finished hummus to a container and put it in the refrigerator to cool.
