  1. Soak chickpeas in cold water and leave to infuse for a long time (preferably overnight). Pour in the water, fill with fresh water and put it to cook until ready. During the boiling process, constantly add water so that it does not boil out. When cooked, about 2 cm of water should remain at the bottom of the pan.
  2. In an electric coffee grinder, add the cooked chickpeas (still warm) together with the remains of water, peeled garlic, lemon juice, olive and sesame oil, grated coriander and grind until a homogeneous mass is formed. Add salt to taste. If the mass turns out to be too thick and it will be bad to rub, add more olive oil or water – there should be no lumps left. You can beat it in a blender. Transfer the finished hummus to a container and put it in the refrigerator to cool. Enjoy your meal!
