  1. Cut the pumpkin, quince, and apples into cubes.
  2. Wash the raisins and rice.
  3. Mix raw rice with sliced apples, quince, raisins. Add sugar, salt, and mix well.
  4. Put half of the sliced pumpkin in a greased baking dish.
  5. Top with a layer of rice with apples, quince, raisins.
  6. Cover the rice with the remaining pumpkin. Fill with water.
  7. Close the form with a lid.
  8. Bake in a preheated 180 degree oven for 1-1.5 hours. Cool down.
  9. Cover with a plate and turn the casserole over. Cover again with a plate and turn over again.
  10. Since the casserole is lean, it does not hold its shape a little. But it doesn’t matter. We eat pumpkin rice casserole with quince, apples and raisins.
