In a saucepan with 50 ml of olive oil, fry the quinoa and 2/3 of the greens. Pour water into a saucepan so that it covers the quinoa by 1.5 cm, add salt, bring to a boil. Cook until tender. Let cool at room temperature.
In a separate bowl, whisk the eggs with a fork, add the remaining greens.
Mix the egg mixture with the cooked quinoa.
Heat the remaining oil in a frying pan. Spoon the small balls into the pan. Press down on the back of the spoon to make cakes. Fry for 3 minutes on each side.
Serve the biscuits with lettuce leaves. Enjoy your meal!
