In a saucepan with 50 ml of olive oil, fry quinoa and 2/3 of the greens. Pour water into a saucepan to cover quinoa 1.5 cm, add salt, bring to a boil. Cook until ready. Allow to cool at room temperature.
In a separate bowl, beat with a fork eggs, add the remaining herbs.
Egg mixture mix with cooked quinoa.
Heat remaining oil in a frying pan. Use a spoon to put small balls on the pan. Press the back of the spoon to get the cakes. Fry for 3 minutes on each side.
