  1. The time is indicated without taking into account the soaking of mushrooms and the infusion of snacks. Rinse the mushrooms and cover with cold water for 1 hour.
  2. After an hour, drain the water, boil it and pour the mushrooms again, for 3 to 4 hours.
  3. Before cooking, boil the mushrooms, cook for 5 minutes at a slow boil. Peel the onion and cut it into feathers.
  4. Heat the sesame oil, put the onion, simmer it over low heat for 3 to 5 minutes, pour in the soy sauce.
  5. Drain the mushrooms, add to the pan, pour in 5 tbsp. l. mushroom broth, simmer for 5 minutes. PS : on the remaining mushroom broth, you can prepare soup or sauce, you can freeze for later use.
  6. Add paprika, hot chili pepper, sugar, a little salt, simmer for a couple of minutes.
  7. Add the finely chopped garlic, fried sesame seeds, stir, let boil, pour in the vinegar and remove from the heat.
  8. Add chopped green onions, stir, cool, let stand for 6-12 hours.
