This recipe for chicken in a hot and sweet sauce was brought by me from Qingdao. A quick recipe without difficulties, just like it is prepared at home in ordinary Chinese cuisine. It is especially nice that the meat in the marinade can be prepared in advance and then cooking will take a few minutes.
For the marinade, and in combination with the future sauce, mix ketchup, sugar, soy sauce and water.
I used Kikkoman soy sauce.
It is better to try the sauce beforehand, so that it is moderate in salt for you (sauces are different).
Cut the fillet into 2-3 cm bars and put the marinade in the refrigerator for at least 15-20 minutes.
But you can also leave it for a day or night.
At this time, you can peel and finely chop the garlic.
Drain the sauce from the chicken and fry it on high heat until tender (literally 3-5 minutes).
Remove to the side
Lightly fry the garlic in a pan.
Add starch and red pepper to the drained sauce, mix thoroughly and send to the pan with the garlic.
Fry for a couple of minutes.
Add the meat and fry for another 2 minutes.
Then serve with a neutral side dish.
For example, with rice.
