Spanish Tortilla Recipe
Tortilla is one of the most popular Spanish dishes. It is served in almost all restaurants and tapas bars as a snack, filling for sandwiches or as an independent dish (with tomato bread). It’s amazing how three very inexpensive main ingredients – potatoes, onions and eggs – combine to make such a delicious and satisfying dish.   2. Cut the onion into thin half rings, season with salt and pepper and simmer in olive oil over low heat, stirring frequently, for about 30 minutes.
  3. The onion will greatly decrease in volume and acquire the color of caramel.
  4. Cut the potatoes into thin slices and fry in olive oil until golden brown.
  5. Lightly beat the eggs, add salt and pepper to taste. Put the finished onions and potatoes in a bowl, pour in the beaten eggs and mix well. Put half of the mixture in a frying pan greased with olive oil, put slices of ham and cheese on top.
  6. Put the remaining mixture on top, cover and cook over low heat for 10 minutes. Turn onto a plate and return to the pan with the unroasted side down and cook for another 10 minutes. For tortillas (as well as frittatas and many other dishes), it is very convenient to use a double mold. The cooking time may vary depending on which type of tortilla you like – wetter (cook less) or drier (cook longer). The tortilla is delicious and cold, so it is convenient to cook it the day before and take it with you on a picnic.
  7. Cut the finished tortilla into slices and serve with tomato bread (toasted bread is rubbed with garlic, and the tomato is cut in half, poured with olive oil).
