I share a recipe for a very tasty vegetable pancake, which is easy to prepare. The recipe uses available seasonal vegetables.

  1. Zucchini cut into strips (you can not peel the skin), grate the carrots on a grater for Korean carrots.
  2. Cut the potatoes into thin strips and chop the green onions.
  3. Put all the vegetables in a bowl, add salt and pepper to taste, and mix.
  4. Add flour, water and egg and mix well. This amount will make two pancakes.
  5. Pour 1 tablespoon of vegetable oil into the pan and put half of the vegetable mass, cut the mushrooms into slices and put them on top. Fry over medium heat. The diameter of the pancake is 18 cm. Do not cover with a lid!
  6. When the bottom of the tortilla is well browned, turn and fry the other side, add another 1 tbsp of vegetable oil. The pancake should be well fried.
  7. The result is a very tasty vegetable tortilla or vegetable pancake. You can serve it with any sauce to your taste. I made this sauce – 1 tbsp soy sauce,1 tsp vinegar (I took wine) and 1 tsp sesame.
