Cut the beef tenderloin into strips, sprinkle with salt, pepper, thyme leaves, crushed garlic, 20 ml of olive oil, mix and leave to marinate for 10 minutes.
In a hot frying pan, fry the beef for 2-3 minutes in the remaining oil. The fire is maximum so that the juice does not have time to come out of the meat and the beef is not tough.
Add the cherry tomatoes cut in half, stir and remove the pan from the heat.
Put the meat and tomatoes on a warmed dish. Put arugula and parmesan chips on top, garnish with balsamic sauce. Serve immediately to the table!
