I love the classic combination of buckwheat porridge with meat and mushrooms. I often cook and am constantly looking for new and interesting recipes using these products together. I offer you a hearty homemade dish: zrazy with buckwheat in mushroom sauce. It is very fragrant and delicious!
Pour the buckwheat with water for 1-2 cups, bring to a boil and cook over low heat until tender for 20 minutes. Cover with a lid and set aside to cool.
Cut the onion into cubes and fry until transparent in vegetable oil.
Add the chopped mushrooms. Mushrooms can be taken any at will and availability. I have sliced boiled mushrooms. Fry the mushrooms and onions for about 5 minutes.
Take minced meat, I have pork, add a mixture of salt and freshly ground pepper. To interfere.
Add half of the fried onion and mushrooms to the buckwheat porridge, mix.
Take the filling, flatten it in the palm of your hand and put buckwheat porridge with onions and mushrooms in the middle with a tablespoon.
Roll the minced meat with the filling into a “bun”. The remaining buckwheat can be used as a side dish to the dish.
In a frying pan, fry the zrazy in vegetable oil from all sides.
Put the fried zrazy on the remaining fried mushrooms with onions.
Pour in the mixture of broth and cream. You can take any broth you want: mushroom, meat, vegetable or even just water. Bring the mixture to a boil and simmer for 10 minutes on low heat until the sauce thickens.
Serve the zrazy hot, sprinkled with finely chopped herbs. I have fennel.
