Baked Vegetables with Turkey Medallions Recipe
Baked vegetables are an ideal option for a delicious and healthy side dish or an independent snack. Vegetables cooked in a sleeve in the oven completely retain their juiciness, and when seasonings are added, they are maximally saturated with their aromas and taste. With this method of cooking, the sliced pieces remain “whole”, acquire the desired softness, a slight blush and a pleasant taste. For a festive presentation, a bright vegetable side dish can be supplemented with any meat dish, in this recipe these are turkey medallions. The meat is cooked quickly, the main thing is not to over-dry it, so the medallions are baked in the oven together with the vegetables in the sleeve.

  1. Food preparation products:
  2. Medallions (d = 6-7 cm) – can be prepared from ready-made steaks or a large turkey breast. Prepare the marinade for the medallions: put honey in a small bowl, add soy sauce, mix well, then add spices (garlic 1 tsp + paprika 1 tsp + turmeric 0.5 tsp), pour in olive oil. The mixture should be homogeneous (slightly thickened).
  3. Marinate the prepared turkey medallions and put them in the refrigerator for 3 hours or more … (in my case – 12 hours).
  4. Prepare the vegetables for baking: wash and peel potatoes + pumpkin + carrot + celery root in approximately equal quantities or use vegetables to your liking. Cut the vegetables into large strips in a food processor (attachment for slicing French fries).
  5. Put the prepared vegetables in a baking sleeve, add spices (2 tsp ground garlic + 2 tsp ground paprika + 0.5 tsp turmeric + 1.5 tsp dry rosemary + 0.5 tsp salt) and 2 tbsp olive oil. Fasten the sleeve and shake it slightly so that the vegetables mix with each other and with spices. Place the sleeve on a baking sheet, set aside (do not put it in the oven yet). Turn on the oven. Marinated turkey medallions fry in a preheated grill pan for 2-3 minutes on both sides, lightly salt the medallions (0.5 tsp) and pepper. Open the sleeve with vegetables on one side, put the baked turkey medallions on top of the vegetables and fasten the sleeve again. Do not pierce the sleeve (with this method of cooking, turkey meat will remain juicy and soft, and vegetables will cook much faster). Bake the dish at a temperature of t 200C for 30-35 minutes.
