Beetroot and Avocado Tartare Recipe

  1. Peel the avocado, sprinkle with the juice of half a lemon and chop it with a food processor or blender.
  2. Season the chopped avocado with salt and pepper, sprinkle with a small amount of olive oil, mix, cover with cling film and refrigerate.
  3. Season the cheese with salt and pepper, add a little lemon zest, herbs and thyme.
  4. Fill the resulting mixture with olive oil, cover with cling film and refrigerate.
  5. Pre-boiled beets are crushed using a food processor to the state of tartar.
  6. Add salt to the chopped beets, add a few drops of tabasco and season with olive oil.
  7. Fill the square mold to form the salad with a layer of avocado, seal.
  8. The second layer is beetroot.
  9. And finish the design with a cheese layer. Garnish with lemon zest and thyme leaves.
