Instructions
Peel the avocado, sprinkle with the juice of half a lemon and chop it with a food processor or blender.
Season the chopped avocado with salt and pepper, sprinkle with a small amount of olive oil, mix, cover with cling film and refrigerate.
Season the cheese with salt and pepper, add a little lemon zest, herbs and thyme.
Fill the resulting mixture with olive oil, cover with cling film and refrigerate.
Pre-boiled beets are crushed using a food processor to the state of tartar.
Add salt to the chopped beets, add a few drops of tabasco and season with olive oil.
Fill the square mold to form the salad with a layer of avocado, seal.
The second layer is beetroot.
And finish the design with a cheese layer. Garnish with lemon zest and thyme leaves.
