When the dough came up, increased, became lush – start cutting it. Divide into pieces (I made large buns, and I got 12 pieces), roll the pieces into equal balls and spread them on the table, after sprinkling it with flour, after 10 minutes roll the balls into tortillas, spread out at a distance from each other.
Squeeze the middle out of a mold suitable in diameter and smear with egg yolk whipped with sour cream.
Put the filling in the center, wrap the dough ring three times around your finger and distribute the filling around the edges.
Place on a baking sheet that can be oiled or covered with oiled parchment. Brush the top with beaten egg yolk and let the dough come up for 10-15 minutes.
We send it to the oven at 180 degrees for 30 minutes. In any case, control the temperature of your oven.
