Eggplant in a Tortilla Recipe

  1. Wash the eggplants, cut into cubes, add salt, mix and leave for 10 minutes, this will help to remove the bitterness.
  2. Fry carrots (long thin strips) and onions (feathers) in vegetable oil.
  3. Wash the eggplants, squeeze and add to the vegetables. Fry for 3-4 minutes over medium heat, stirring occasionally.
  4. Peel the garlic, wash the dill and dry it. Finely chop the garlic and herbs. Add to the vegetables.
  5. Chop the walnuts with a knife. Add to the pan, stir.
  6. Pour soy sauce over it. Stir, remove from heat.
  7. Two tortillas (pita bread), preheated eggplant, put on them with two thin slices of cheese.
  8. Cover with half of the tortillas, preheat them on the grill. I use an electric grill with a grill attachment. You can simply fry each cake in a dry frying pan for 4 minutes.
  9. Here it is – a striped miracle. By the way, my granddaughter has not eaten eggplant for 6 years, she ate this pie with great appetite.
  10. Add the herbs, sauce and serve.
