Flavorful Pumpkin Waffles Recipe
Tender and soft waffles are a great option for a leisurely weekend Breakfast. They are good on their own, but with chocolate or caramel sauce they will be doubly good. And if you don’t have a waffle iron, make pancakes from this dough, I’m sure that the result will be no less good.

  1. Put the pumpkin puree in a deep bowl (boil or bake the pumpkin, then puree).
  2. Add the yoghurt.
  3. Add two egg yolks.
  4. Add sugar. Mix everything with a whisk until smooth.
  5. Measure out 60 ml of vegetable oil.
  6. Pour it into a bowl. Mix everything again until smooth.
  7. In another bowl, add the flour, baking powder, baking soda, and spices. Stir. If you have dried zest, add it to the flour, if fresh (which is preferable), add it in the previous step. From spices, I suggest taking cinnamon, ground ginger and nutmeg. The proportions to your taste or you can take about 3/4 tsp cinnamon and 1/8 tsp of ground ginger and nutmeg. Or you can take a ready-made spice mix in the store.
  8. Add the flour mixture to the liquid ingredients.
  9. Mix everything again until smooth.
  10. Pour the egg whites into a bowl and add a pinch of salt.
  11. And beat them to soft peaks.
  12. Add the whites to the bowl with the dough.
  13. And use a spatula to gently mix them into the dough.
  14. In a small bowl, pour a little oil, it will be needed to lubricate the waffle iron.
  15. Lubricate the surface of the waffle iron with vegetable oil, pour the dough.
  16. Bake the waffles until tender.
  17. Remove them carefully. Serve warm.
  18. You can add chocolate and/or caramel sauce to them. Enjoy your tea!
