Instructions
  1. Take a slice of bread, cut out the middle of it so that the remaining “frame” is thinner. We put the middle aside, it will still be useful to us. I have a low-carb, grain-free keto bread made from almond flour. Carbohydrates in one slice of such bread – 1 g . Mix eggs, finely chopped dill and salmon, cut into small pieces in a bowl. Personally, I don’t use salt because there is enough salt in the ingredients. But you can add salt and pepper to taste. If the salmon is salty, do not put salt in it.
  2. Heat a frying pan, add oil (I have grape seed oil), lay out a slice of bread, carefully pour the egg mixture into it. Fry on low heat so that it does not burn. In this case, everything should happen pretty quickly.
  3. Sprinkle with basil leaves, spreading evenly over the entire surface.
  4. Sprinkle with grated mozzarella, 1-2 pinches per slice.
  5. Cover with the cut-out middle of the bread. We wait 30 seconds.
  6. We turn our “sandwich” to the other side. Carefully hold the spatula and fork so that nothing falls apart and does not deform.
  7. We bring it to readiness, put it on a plate. We do the same with the remaining slices of bread.
  8. Before serving, put the sliced avocado on the ready-made “sandwiches”.
  9. We enjoy a hearty and delicious breakfast, which is also prepared very quickly. And it gets eaten even faster.
