  1. Put the washed potatoes in a steamer together with the peel. Cook until soft for 20-30 minutes.
  2. Remove the skin and pass it through a potato press or remember how to make mashed potatoes.
  3. Add one beaten egg, finely chopped green onion, grated parmesan cheese (or any other hard and salty cheese), a little salt and ground black pepper. Mix all the ingredients very thoroughly with a fork, do not overdo it.
  4. Using two tablespoons to form croquettes. You can also use an ice cream spoon. Dip the dough in flour, then roll it out on the palm of your hand to make a ball, then gently shape it into an oval shape. Continue until the whole mixture is ready. There should be about 20 of them. Now is the time to preheat the oven to 375 °F – 190 °C.
  5. Beat 2 eggs and put the breadcrumbs on a plate. Sprinkle the crumb with 2 beaten eggs and breadcrumbs. Dip the croquettes in the egg mixture, then in the breadcrumbs. Quickly flip them over with the palm of your hand to make sure they are smooth. Set aside.
  6. Once all the croquettes are ready, add olive oil to the pan (to cover the entire bottom of the pan and a little more), and then lightly fry them on medium or low heat on all sides until golden brown, turning carefully so as not to crush.
  7. As soon as all the croquettes are browned, put them on a baking sheet lined with parchment paper. Bake in the oven for 20-25 minutes at a temperature of 375 ° F-190 °C. Serve with love! Enjoy your meal.
