  1. First, let’s do the cupcake decor and make lemons. Rinse well and pour boiling water over it. The decor in the recipe is not required, but I wanted to make New Year’s cakes more elegant, so I came up with the idea of lemon slices. The decor can be prepared the day before.
  2. Cut into rings as thinly as possible. Prepare water and sugar for the syrup.
  3. Prepare the syrup, lower the lemon rings and cook over medium heat for 20 minutes. The task is not to cook candied fruits, but to make the crust soft. Flip it into a colander when the syrup drains, put it on a baking sheet, cover with a lid or a film, do not over-dry them.
  4. Now let’s focus on the cupcakes. Prepare the products for the test. Squeeze the juice from 2 tablespoons of lemon and grate or slice the zest with 1 tablespoon. Cut the candied pineapple into slices.
  5. Mix the candied fruits, juice and lemon zest, mix well and let them soak.
  6. Mix flour with baking powder. Sour cream with milk. Mix these two mixtures. Add soaked pineapple candied fruits to the mass. Turn on the oven to preheat at the set temperature of 180 C.
  7. Beat the eggs with white sugar.
  8. Add to the prepared dough. Mix with a spatula or mixer at low speed.
  9. Put the paper capsules in the cupcake molds and pour the dough. From the lemon prepared the day before, roll up the bags and insert them into the center of each cake (they turn over at their discretion and get all different). Sprinkle a small pinch of brown sugar on top.
  10. We send it to the prepared oven for 20-25 minutes. Remove, cool and sprinkle with powdered sugar or cocoa to give a lemon-chocolate flavor. Came out 12 pieces of 65 g.
