Meat “Charlotte” Recipe
Meat pie is a casserole, very similar in appearance to an apple “Charlotte”. The pie has a tender meat cake, while it holds its shape well (even hot) and does not crumble. Breadcrumbs on the surface of the pie give a pleasantly crisp crust.

  1. Cook the potatoes in salted water and puree them without adding oil and liquid. Pass the meat through a meat grinder three times.
  2. I have a form of 30 cm. Therefore, I doubled the number of products. The minced meat must be salted and pepper to taste. Add the egg yolks.
  3. Combine the mashed potatoes and minced meat. Knead well until smooth.
  4. Grease the mold with butter and sprinkle with breadcrumbs.
  5. For the filling, I chose small potato tubers, and from the large ones I prepared mashed potatoes for the dough. Raw potatoes should be cut into circles about two to three mm thick.
  6. Whisk the whites to strong peaks.
  7. Add the proteins to the meat dough, mix gently and immediately put into the prepared form.
  8. Put the potato pieces in a circle, partially pressing into the dough. Fill the entire surface of the pie with potatoes.
  9. Beat the egg with mayonnaise.
  10. Generously grease the cake with this mixture.
  11. Sprinkle the pie with breadcrumbs.
  12. Bake at a temperature of 170 degrees until golden brown. The finished cake will be well separated from the edges of the mold.
